Healthy Fish Tacos

  • Step 1: Pickle your onions

  • Step 2: Make your pico de gallo salad

  • Step 3: Blend your avocado crema sauce

  • Step 4: Cook your salmon

  • Step 5: Toast your tortillas

  • Step 6: Assemble your tacos


  • 3 corn tortillas

  • 6 oz salmon, season with salt & pepper

  • Few slices of avocado

Pickled Onions:

  • 1/2 of a red onion, sliced

  • 1/2 cup red wine vinegar

  • 1/2 cup water

  • 1/4 cup monkfruit sweetener

Pico De Gallo Salad:

  • 1/2 cup white onion, chopped

  • 1 small jalepeno, seeded & chopped

  • 2-4 tbsp lime juice

  • 1 large tomato, chopped

  • Cilantro, chopped

  • 1/2 tsp sea salt

  • 1/4 cup red cabbage, thinly sliced

  • Green onions, chopped

Avocado Crema Sauce:

  • 1/2 avocado, pitted

  • Handful of cilantro

  • 2 tbsp lime juice

  • Sea salt

  • 1/4 cup water

  • 1 garlic clove

Step 1: Pickle your onions!

Set a pot on medium heat, add red wine vinegar, water, and monkfruit sweetener. Bring to a boil and once sweetener has dissolved, add onions. Turn down the heat to a simmer, close the pot with a lid, and allow to simmer for 10 minutes until onions are tender. Once done, set aside

Step 2: Make your pico de gallo salad (salad because we added cabbage:)

To a bowl, add chopped tomato, sliced cabbage, chopped jalepeno, chopped onion, chopped cilantro, 2 tbsp of lime juice, green onions, and sea salt and mix. Set aside!

Step 3: Add avocado, garlic, lime juice, water, cilantro, and salt to a blender and blend until smooth. Add water for thinner consistency!

Step 4: Preheat a 2 large skillets on medium heat. Once preheated, spray with cooking spray and add seasoned salmon. Pan sear for about 3-4 minutes each side, then set aside. Meanwhile salmon is cooking, toast your tortillas in the other skillet. Start by spraying cooking spray onto the preheated skillet and toast your tortillas for 2-3 minutes on only one side until toasted.

Step 5: Assemble your tacos in this order:

-Lay the tortilla on the crispy side down and add the salmon

-Add the pico de gallo salad

-Add a slice of avocado

-Add pickled onions

-Add 1/2 tablespoon of creama sauce

-Sprinkle cilantro on top of the taco and add some hot sauce!
