What you'll need:
1 large skillet & 1 pot
Measuring cup
Masher for the beans & spatula for eggs
Chopping board & knife
Spatulas and a chopping board
Can openner
Steps:
Step 1: Mash your beans
Step 2: Slice your avocado
Step 3: Cook your eggs
Step 4: Toast your tortillas
Step 5: Assemble tacos
Recipe:
1 - 15 oz Can of Beans (I used black beans)
(Optional for refried beans: 1/4 red onion, chopped red onion and cumin)
3/4 cup Egg Whites
3 Corn Tortillas
2 Tbsp Mexican Crema
1/4 large Avocado, sliced
Sea Salt
Cooking Spray
(Optional: Chopped Cilantro & Tobasco Sauce)
Step 1: Make your refried beans! You can do this ahead of time or morning of! Preheat a pot on medium heat. Once preheated, add your onions and a few tablespoons of water to sweat out the onions. Cover the pot with a lid for 2 minutes. Once done, mix your onions around the pot with a spatula and add your canned beans. Turn the heat up to boil the beans for 5 minutes. Once done, add sea salt and cumin. Then, use a masher to mash the beans into a chunky consistency for refried beans! Set aside.
Step 2: While beans are boiling, chop up your cilantro and avocado slices on a chopping board and then set aside.
Step 3: Preheat a large skillet on medium heat. Once preheated, spray the skillet with cooking spray and add your egg whites. Scramble for 1 minute, then set aside in a bowl.
Step 4: Clean off the egg residue from the skillet you just used. Turn the heat to medium heat. Once preheated, turn the heat back down to medium low and spray the skillet with cooking spray and add your tortillas. Toast your tortillas until they are crispy on the bottom - about 2 minutes.
Step 5: Assemble your tacos in this order:
-Lay the tortilla on the crispy side down and add only 2 tablespoons of the refried beans
-Add the egg whites on top of the beans
-Add a slice of avocado on the side of the eggs
-Add 1/2 tablespoon of creama sauce
-Sprinkle cilantro on top of the taco and add some hot sauce!
P.S. You won't be consuming the whole can of beans in this meal. If you want to hit the macros/calories down below, only add 2 tbsp of beans per taco. Store the remaining refried beans in the fridge for later use!
